like a spreadable BLT

Ingredients

  • 5 egg yolks
  • 1 tbsp Dijon mustard
  • 7 tbsp lemon juice freshly squeezed
  • 1.25 cup rendered bacon fat, chilled
  • .5 tsp sea salt, fine
  • pepper to taste

Instructions

    1. Put yolks, mustard and 1.5 tsp lemon juice in blender or mixing bowl, beat for 2 minutes on high. 2. Add bacon fat (no need to be gradual if well chilled), continue to beat till thickens to suit, may not need all fat, depending on how rich you like it. 3. Slowly blend remaining lemon juice, salt, pepper, whipping continuously. Adjust seasoning to taste. 4. Keeps for couple weeks in fridge.
