Another amazing way to eat fresh tomatoes! In honour of our Spanish help-x guest.
Easy to blend a batch and keep in your fridge. The flavours develop the longer you chill it.

Ingredients

  • 1 slice dry, stale bread
  • 1.5 lb ripe tomatoes
  • 1 small cucumber
  • 1 small red onion
  • 3 cloves garlic, minced
  • 1 green bell pepper
  • 2 tablespoons sherry vinegar
  • 3 tablespoons extra virgin olive oil

Instructions

    Soak the bread in a small amount (few tablespoons) of water for 1 minute. Gently remove and “squeeze” dry.

    Coarsely chop all your vegetables and place in a blender. Add the oil and vinegar. Add salt and pepper to taste. Blend for 1 minute or until smooth.

    Refrigerate for at least 1 hour.
