Gazpacho Andaluz recipe
Another amazing way to eat fresh tomatoes! In honour of our Spanish help-x guest.
Easy to blend a batch and keep in your fridge. The flavours develop the longer you chill it.
Ingredients
- 1 slice dry, stale bread
- 1.5 lb ripe tomatoes
- 1 small cucumber
- 1 small red onion
- 3 cloves garlic, minced
- 1 green bell pepper
- 2 tablespoons sherry vinegar
- 3 tablespoons extra virgin olive oil
Instructions
- 1Soak the bread in a small amount (few tablespoons) of water for 1 minute. Gently remove and “squeeze” dry.
- 2Coarsely chop all your vegetables and place in a blender. Add the oil and vinegar. Add salt and pepper to taste. Blend for 1 minute or until smooth.
- 3Refrigerate for at least 1 hour.
