Squash, Vegetable Spaghetti

These are large squashes, the flesh can be frozen in bags, then partially defrosted before steaming for 6 - 7 minutes. The flesh comes out with a fork in strands like spaghetti when cooked. Can be used in stead of pasta in italian dishes, can be baked, boiled, microwaved or slow cooked. According to Nancy Bubel in 'Root Cellaring' they store well in cool dry place till November.
