This is the common way to quote beef sides, because the cutting instructions re bone and fat will affect yield. I raise a small herd of Canadian Lineback beef cattle, on pasture, grass fed. These are a heritage breed with a reputation for good flavoured meat. The meat is frozen, butcher paper wrapped.

Taking orders for 2025, delivery in June. These are Tamworth pigs, a heritage and known for its bacon. A side of pork will be about 100 lb hanging weight, with about 75% yield. You'll get loin chops, butt chops,and sirloin chops, shoulder and ham roasts, sausage, and 10 lb of bacon. You also get the fun cuts to make broth, head cheese, jellied tongue if you want them.
